Tucked amid the lush, verdant landscape of Ubud, Syrco BASÈ emerges as one of Bali’s most compelling fine dining destinations—where gastronomy becomes a language, and every dish tells a story of culture, craftsmanship and connection. Founded in January 2024 by the esteemed two Michelin-starred Chef Syrco Bakker, the rising gastronomic destination is celebrated for reimagining Indonesian heritage through bold innovation and a deep reverence for local artisans.

 

The restaurant’s philosophy is woven directly into its name. In Balinese, the word “BASÈ” translates to both “seasoning” and “language,” elegantly bridging the concepts of taste and expression. In English, it signifies a foundation or basis, reflecting the fertile soil where Chef Syrco has planted his culinary roots.

 

Born in the Netherlands, the Dutch-Indonesian chef draws profound inspiration from his childhood memories of family meals, merging those nostalgic flavours with the traditions and produce he has explored across the archipelago. This vision is anchored by three core values: Traceability, Nature, and Transparency, or “TNT”. By understanding the origins of every ingredient, honouring the earth’s bounty, and fostering open, fair partnerships with local farmers and fishermen, Syrco BASÈ aims to deliver a transformative experience that inspires a deeper awareness of food, sustainability and community.

Before bringing his world-class expertise to Bali, Chef Syrco famously led Pure C in the Netherlands from its opening in 2010, where his exceptional talent earned the restaurant two Michelin stars. His masterful craftsmanship has continued to garner global acclaim at his latest venture. Within its first six months, the restaurant was named one of Bali’s 20 best by Australian media outlet “Traveller,” and later secured the Gold Award at the 2025 Prestige Gourmet Awards. Furthermore, Chef Syrco himself was honoured with the prestigious Two Knives at The Best Chef Awards 2024.

The expansive venue unfolds across four distinct, thoughtfully designed spaces. “The Restaurant” offers a warm, stunning environment overlooking an educational regenerative garden, where guests can indulge in dynamic tasting menus or à la carte selections. “The Bar” celebrates Ubud’s healing heritage by crafting botanical cocktails infused with ingredients harvested straight from the garden, while “The Shop” showcases handcrafted treasures from local Balinese artisans. 

For the ultimate indulgence, the “KU culinary atelier” provides an intimate, 12-seat stand-alone experience centred on personal storytelling. Here, guests embark on an 11-course journey that begins with a guided garden walk and a temple blessing with a local priest, culminating at a chef’s counter where elegant creations like Bali Bouillabaisse and The Ocean are meticulously plated.

Whether dining at The Restaurant or KU, the menus are a revelation. Dinner highlights include Savoy cabbage with green chili koshi and lime; refined fish rouleau with potato purée, leek, razor clam; and rich pork cheek with andaliman peppers and kanari nuts. Diners can choose from the BASÈ Pure, the immersive BASÈ Journey, or the opulent Romantic Package or Full Experience, all available with expertly curated beverage pairings.

Recently, this extraordinary vision arrived in the capital through an exclusive three-week culinary pop-up in collaboration with Plaza Indonesia. From February 16 to March 7, 2026, Altitude Grill on the 46th floor of The Plaza transformed into an urban extension of the Ubud flagship, complete with sweeping skyline views. The pop-up menu balanced Syrco BASÈ’s defining classics such as Steak Tartar with rendang seasoning, Taro Rösti with Duck Betutu, Spiny Lobster preparations, and Pure Chocolate with soursop and avocado, with dynamic new culinary discoveries. Guests savoured these regenerative flavours through curated tasting experiences such as the refined Pure Menu for lunch or the comprehensive Journey Menu, which ensured a vibrant, unforgettable intersection of Bali’s conscious dining and Jakarta’s urban energy.
